Take minute and just stare at the picture below. I mean really, is that not shear perfection on a plate??? I’m making your mouth water, aren’t I?
Good! That’s my intention! I want you to crave this; to get that passion to go into your kitchen and cook.
I go in these spurts when it comes to foods and what I tend to concentrate on. For the LONGEST time it was avocados (yeah I know dear sweet sister, enough already.. LOL) but I just love those glorious little green things AND they are healthy! Lord knows my thighs thank me for that. Then we had those crab rangoons that I literally made every day for 3 weeks (well okay, that was Mr. Fantabulous’ doing) but I still partaked in them. LOL Wait, is partaked even a word? Probably not but hey, this is my site and I can make up my own words… kinda like Fantabulous and AwesomFanFrittenTastical… yes that’s my word. lol
Since I’m not a huge fan of ground beef (trust me I wish I was but it just reeks havoc on my stomach) I opt for ground turkey and chicken. Well since I have probably one of the most awesome butcher shops around considering I live in the middle of No Man’s Land I tend to buy a lot, and I mean A LOT of fresh chicken breasts. I discovered a while back that my food processor makes amazing fresh ground turkey and chicken by literally plopping up the pieces and letting it chop away. Now granted it’s not the same as if it goes through a meat grinder as this tends to have smaller ‘chunks’ but I like that texture. And since it’s my kitchen, my house, my belly – I get to say what goes in it.
And since I’ve been on this major ground chicken kick as of late, I wanted to make a healthy slider. It’s funny when I work on coming up with new recipes. I tend to put my engineering cap on and dork out. Meaning I have paper everywhere, my calculator (yes I actually calculate measurements and percentages) and do over-involved analyses of how I think something will turn out even before I step one foot in the kitchen. But this, this I knew immediately what I wanted and how I wanted to make it. This is one of those recipes that just came together like a beautiful aria or the most perfect rose that just bloomed. The flavor combinations, while simplistic, work so amazingly well that there isn’t one thing I’d change about this slider. Well okay, maybe possess the ability to eat 2 of these instead of getting stuffed after one. *wink*
I could hardly wait to bite into this (and literally just about burnt my lip off because I didn’t wait long enough but it was so worth it). The flavors just exploded in my mouth like fireworks on the 4th of July. We’re talking AMAZING! And the best part out of all of this…
They are HEALTHY!!! I mean chicken (protein), spinach (antioxidants and veggies), feta (protein)… DUR!
So I make these and Mr. Fantabulous sits at the table and just stares at it. He shrugs figuring he’s playing guinea pig again and reaches for the ketchup (we had steak fries on the side) and goes to put this on the slider. I just about smacked the bottle out of his hand and told him to try it first before he adds that to it. Normally I wouldn’t care but I knew this could stand on it’s own. Don’t get me wrong, I LOVE ketchup in a big way but this is not a ketchup-kinda-slider. Trust me. He took one bite and his eyes lit up soooooooooo big. As he’s pulling it away from his lips I could hear a faint “Mmmmmm….” as he actually chewed. Now you have to realize something. I really don’t think my baby chews but more like unhinges and inhales. He says he can taste the food but I remain skeptical. LOL
Even though it’s still friggen snowing here (did I mention that it’s almost the end of March and we got 6″ of snow this morning???) this to me represented Spring and Summer in a big way! I cannot wait to grill these and serve with a grilled Caesar salad with a light berry jalapeno salad!

Ingredients
- 1 lb ground chicken
- 1 tablespoon Montreal Steak Seasoning
- 1 teaspoon Worcestershire sauce
- 2 tablespoon extra virgin olive oil
- 1 cup feta chunks plus extra for on top of the sliders (I buy a block of feta and cube it up myself into 1/2” chunks)
- 1 cup, packed fresh spinach leaves
- 8 slider buns
- 2 avocados, sliced
Instructions
- In a bowl combine the ground chicken, seasoning and Worcestershire sauce. Try not to overwork the meat here. You just want to combine it.
- Using lightly oiled hands (trust me on this), scoop up a 2” round ball of the meat and gently pat it down forming a 2 1/2” round circle. If it’s easier, put a teensy bit of oil on a plate and lay the ball on that to flatten it down.
- Next place 5-6 of the spinach leaves in the middle of the slider making sure to not touch the edges.
- Next, please 2-3 feta chunks in the middle of the spinach.
- Scoop up a 1 ½” round ball of meat and flatten that down.
- Place that over top of the feta and press the edges together.
- Once you have the edges all sealed, pick up the slider and gently form it into a patty.
- Set aside on a lightly sprayed plate and continue on making the rest of the sliders.
- At this point you may need to re-apply some oil to your hands to continue on making the rest of the sliders.
- When all the sliders have been formed, place the olive oil in a 12” non-stick pan over medium heat.
- Place each sealed stuffed slider down and cook for 5-8 minutes per side. After I flip the burgers and cook them on the other side I will then turn each one on the patty wall and cook them about 30 seconds or so just to get that even sear.
- Remove from the pan and plate.
- I prefer to serve these on toasted slider buns (brioche sliders are AMAZING!) with a few slices of avocado.
Notes
You could easily substitute in ground turkey as well here.
