Day 3 – Countdown to Christmas – Oreo Cheesecake Cookies

Ingredients

  • 1/2 cup unsalted butter, softened
  • 5 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon Vanilla Bean Paste
  • 1 egg
  • 1 teaspoon Baking Powder
  • 1 1/4 cup all-purpose flour
  • 11 oreos broke into pieces
  • 10 Oreos ground up
  • *optional – 1/2 cup mini chips

Instructions

  1. Preheat oven to 350 degrees F.
  2. Line a pan with parchment paper
  3. Cream together butter and cream cheese until whipped
  4. Add in the sugar and beat for 3 minutes.
  5. Add the egg and vanilla and mix well.
  6. Add the flour, baking soda and powder; mix on low until it’s all well incorporated.
  7. Add in the Oreo pieces and mix with a rubber spatula or sturdy spoon. You want to make sure you do not break up the chunks – you can add in the mini chips now too.
  8. Chill the dough for 1 hour.
  9. Put the ground up Oreos in a bowl and set aside.
  10. Wetting your hands, scoop the cookies into a 2” ball and then roll in the cookie crumbs.
  11. Place on the sheet 2” apart.
  12. Bake for 12-15 minutes, or until the tops are puffed and are gently set. DO NOT OVER BAKE!
  13. Cool on the pan for 2 minutes before transferring to a wire rack to cool completely.
  14. Store in an airtight container.
