Chicken Fiesta – the possibilites are endless!

- 2 tablespoon extra virgin olive oil
- 4 boneless, skinless chicken breasts, cubed
- 1 cup red pepper, cut into strips
- 1–2 green onions, chopped (white and green)
- 1 tablespoon garlic, minced
- 1 teaspoon kosher salt
- 1 teaspoon fresh cracked pepper
- 2 tablespoon fresh cilantro, chopped
- 1 small can chopped green chilis, not drained
- ½ teaspoon smoked paprika
- 1 teaspoon chili powder
- 3/4 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1 dash cayenne
- 1/2 lime juiced
- 1 can black beans, rinsed and drained
- Heat the oil in medium heat.
- Add the peppers and onions to the pan and sauté for 5 minutes.
- Add the garlic and cook for 3 minutes.
- Add the chicken, cilantro, seasonings and mix.
- Cook for 3 minutes, stirring to incorporate the spices.
- Add in the lime juice and stir.
- Continue cooking for 4-5 minutes or until the chicken is done.
- Add in the beans and cook for 2 minutes.
- Remove from heat and garnish with fresh cilantro
