Italian Sammich – Hot Sausage with Peppers and Onions

- 4 hot sausage links
- 1 large red pepper, seeded and cut into 1/4” slices
- 1 large yellow pepper, seeded and cut into 1/4” slices
- 2 large yellow onions, cut into 1/4” slices
- 4 large eggs
- 1 tablespoon olive oil
- 4 Soft ‘n Chewy Hoagie Rolls
- In a large skillet over medium heat, add the oil.
- When the oil begins to shimmer add in the sausage links.
- Cook for 5-7 minutes per side or until golden brown on all sides.
- Add in the sliced onions and peppers.
- Cover, reduce the heat to low and cook for 35 minutes.
- Remove the lid and gently stir the peppers and onions. They should be super soft.
- Remove the sausages and set aside.
- Turn the heat up to medium.
- Crack all 4 eggs in a bowl and then pour on top of the onion pepper mixture.
- Using a rubber tipped spatula, stir around the eggs into the onion pepper mixture to scramble the eggs.
- Cook for 2-3 minutes or until the eggs are set.
- Add the sausages back in and cook for 1 minute gently stirring.
- Slice the buns length wise but not all the way through. Add 1 link and a few scoops of the egg, onion pepper mixture.
- Top with cheese if desired.
