Happy Sunday TKW Family! It’s time for another Weekly Menu to help give you suggestions for great dinners to whip up this week. So how was your week? Mine wasn’t too bad. I was away for 3 days for a conference for work. You know here’s the thing about work type conferences; it’s been my experience that they’ve been drab, boring and just a lot of being talked at. However this one, this one was so not any of that! I had an absolute blast and loved every single minute of it… well okay not the food. It was positively wretched but that’s on the catering company. But the whole conference was amazing. I walked away with such a sense of “Wow! This company gets it!” and pride even. Everything they spoke about, taught us and the vision going forward was in complete alignment with what I wanted, where I wanted to go.
Plus I got to meet so many new people or put faces to voices which is always awesome. But this conference… God, truly amazing is all I can say. So to my company… BRAVO! They really knocked this one out of the ballpark.
Now with my being gone for, if you asked Mr. Fantabulous a bajillion forever years, I had to power cook for that man. Since I was busy from early morning to the week hours of the night I often didn’t get to talk much with him during the day. Thing is for us, we’ve never been apart that long. Since we don’t have kids, even though he’s my husband, I still mother him. I can’t help it; it’s in my nature I suppose. So I worry – will he eat more than cereal (even though literally there were 6 complete full meals in the fridge that could serve a family each!), will he have a wild party (ha!) and OMG.. will he touch my All-Clad pots? LOL
It’s funny as when I was all bundled up in the hotel we got hit with about 8″ of snow. Okay so the snow part isn’t funny but the text I got from Mr. Fantabulous was. It read “Baby, it’s cold, I’m freezing. I just plowed.” then a few seconds later I got “Come home. I want hot cocoa and I don’t know how to make it. <insert sad face>” Okay seriously for me that was the cutest thing ever. See you all know me I just can’t make things simple. Meaning most people would just scoop out some pre-made mix, heat up some milk and blend. Yeah, not me. First I make my cocoa mixture from scratch though the pre-made stuff isn’t bad in a pinch. And my liquid isn’t just milk. It’s a blend of stuff. And then you have to assemble it in the following way – cocoa mix, milk blend, blend to froth, mini marshmallows, fresh whipped cream and chocolate drizzle. Like I said, I don’t do simple. But trust me, one sip and you’re hooked! It’s amazing.
Thursday I met with my second ortho surgeon as I didn’t like the first guy…at all. Well this surgeon, who has done 3 other ortho surgeries on me, I adore. However on this day I didn’t like him too much as apparently my shoulder had been in a dislocated state for 6 weeks. Nice, huh?! I didn’t know you could still use it while it was dislocated. But it explains the severe pain that I’ve been having. Once he put it in place (after I pretty much on the border of passing out from the pain) he did an assessment of my range of motion. He threw around tons of big dr. words that sound serious (and expensive) and said that he was sending me for an MRA – it’s an MRI with a harpoon needle that they jab into your joint with this dye contrast. Now I’ve had worse pain but these aren’t exactly pain-free either. They hurt, I’m not going to lie but it’s tolerable but then again I have a high pain tolerance. He then threw out some possible issues with it – torn rotator cuff and torn tendon to the deltoid. But I should know more next week. And yes, all of this from that damn deer! #stupiddeer
Saturday I had such a great, great day! I started off super early to get my grocery shopping done before the gym. Since it was a whopping 10F, the groceries were ok to stay in the trunk while I was out and about. After my core workout (which my abs are killing me as I type) I made the god awful mistake of going to Sam’s club around noon. Dear Jesus people… do you not eat at home? WTH? I’m seriously waiting for a riot to ensue over someone not getting that last sample of processed meatball in jarred sauce. I mean folks will stand in line waiting for that tidbit of cheese and god forbid you try to push your shopping cart through that line because you’re actually there to shop! By the looks I get you’d think I just told someone who their kid was ugly, their mother was a hooker and their breath was the equivalent of sewer gas. I’m just there to shop folks, REALLY! Go wash your face, put on real clothes and cook at home for the love of God. Damn greedy cows!
However the day did get way more awesomer (go with it) later on. Mr. Fantabulous and I spent the evening with Mom & Dad Fantabulous along with some other members of the Fantabulous clan. Seriously it just warms my heart. The slew of us went out for Chinese of which my dish had 2 red stars next to it which meant “just swallow fire instead of eating this dish”. Here’s the thing, while it pretty much melted the fat from the inside, my ears felt like they were bleeding and I was afraid to pass gas…ever, the dish was super tasty. Like I’d order it again but I’d have to not wear make up and have tissues beside me as my nose ran and eyes watered the entire time. Afterwards we saw “American Sniper”. WOW what a powerful movie. It just left me speechless.
So with that, I’m going to sign off and go finish up my stuff so I can sit back, sip some chocolate chai tea and watch the snow fall.
Here’s to us having an amazing week!
