Place the pieces of bacon on top of the rack trying not to overlap.
Place in oven and cook for 13 minutes.
Remove from the oven and flip the bacon.
Return to the oven and cook for 10-13 minutes.
Remove from the pan from the oven. You want the bacon crispy but not burnt however remember bacon will slightly crisp up upon cooling.
Allow the bacon to cool to the touch.
While the bacon is cooling, turn on your broiler leaving the rack in the middle.
Using clean kitchen shears, dip the tips into warm water and cut your marshmallows into small 1/4” strips (again this is if you have square marshmallows). You want the strips not quite as wide as the bacon as this will expand when it toasts. If you have regular round ones, cut it into 1/4” chunks.
Place marshmallow strips/pieces on top of each slice of bacon leaving just a slight bit of room in between each piece.
Place the pan in the oven under the broiler for 15-30 seconds (don’t walk away!) or until the marshmallows just start to turn (unless you like them more crispy) a deep golden brown and the edges start to char.
Remove from the oven and press a few chocolate bar pieces on top of each strip of bacon pushing gently into the toasted marshmallow.
Pop the pan back in the oven for 5-10 seconds just to start to melt the chocolate. Do not let it melt entirely!
Remove the pan from the oven and immediately use a thin offset blade to spread the chocolate along the top of each strip of bacon.
Garnish with graham cracker crumbles.
Eat right away or allow to cool completely at room temperature and store in a lidded container in the fridge.
