Oh geez, it’s Sunday and almost 7pm and I’m just now posting the weekly menu. I’m so sorry but this day literally got away from me. Before I get into my day, let’s talk about this past week. So, where do I start? Well, last weekend we ended up going to Indiana for a friend’s wedding. OMG talk about absolutely beautiful! It was literally a picture perfect outdoor princess wedding! I mean she even rode up in a horse drawn carriage! Truly beautiful venue for such a great couple! Thank you Matt and Kate for including Mr. Fantabulous and I in your special day!
And then Sunday morning hit while we were still in Indiana and I started itching… bad. On came the lights and lo and behold my creeper vine rash apparently wasn’t ready to vacate my system and came back with vengeance. Now the doctor did tell me that I may need a 2nd round of prednisone but I had prayed she was kidding or I’d be the exception. Apparently not. Monday morning I went to see my PCP who not only gave me this prednisone shot that could have taken down a horse but also put me on a 6-day high dose pack. OMG seriously this stuff is NASTY. Yes the shot worked within a day but the side effects – honestly I’m not sure if having the rash and itchiness was worse. Such horrible states of confusion, loss of balance (I actually fell twice in the same day! The 2nd time I honestly thought I broke my wrist! You should see the green/blue/purple/black bruise I have!), no sleeping, leg cramps, nausea, INCREDIBLE turbo b*tch mode (Thank GOD my husband loves me and realized that it was the medicine making me this way) and overall feeling like I was running at full speed all day long.
But thankfully today was my last day and the rash is long gone (knock on wood!).
What else, I signed on 2 more clients (yeah!) which honestly I love. Yes the money is nice but truthfully having someone want to work with me and have me create recipes for their brand is such an honor. Plus having the freedom to create deliciousness for them is such a rush!
So the kitchen counters… yeah, ugh. So the General Manager of the granite place came out to inspect the shoddy work they did and how the one piece doesn’t match that they had to replace because their guy jacked it up so bad. It doesn’t match any of the other granite pieces. Of course he started his spiel about it’s a natural stone and no stone looks alike. I let him blow his hot air and just said “Well it’s like this. You have 2 options – one you create another piece that matches the rest of the pieces in here OR you cut me all new pieces at YOUR cost. Your incompetence has cost me time, money and EXTREMELY inconvenienced me. That is it, end of discussion.” And I showed him the door. This is ridiculous – it’s been 2.5 months I’ve been without a truly functional kitchen or a sink because of them! Never again! And trust me, when this is all said and done I will be contacting the BBB and writing multiple unfavorable reviews about them.
Yesterday we spent the day with the Fantabulous in laws which is always awesome. Now today – geesh, talk about busy! Today I spent the entire day in the kitchen (with maybe 30 minutes throughout the day helping Mr. Fantabulous lift stuff or move stuff for the remodel). Today I made the following items (which will be coming up on the website):
› Grandma’s Cream Cheese Pound Cake (OMG it literally brought tears to my eyes from that first bite!)
› Blueberry Power Breakfast Smoothie
› Grilled Ham & Gouda Flatbread Pizza
› Broccoli & Cabbage Slaw with cranberries, raisins and bacon
› Basil & Mozzarella Pan Pizza
› 12 Brisket & Beef Patties (flash freezing them for a quick dinner one night in the future)
› Blueberry Pancakes (Mr. Fantabulous’ favorite)
› Oat Pancakes with Caramelized Bananas (my GOD these were awesome – I am not a pancake fan but the crispy caramelized crust was epic!)
And I’m probably forgetting about other stuff but I’m whooped. So with that, I’m going to sign off, take a shower and relax while I have the house to myself tonight since Mr. Fantabulous is at band practice.
