Happy Sunday TKW Family! So what in the world is up with this weather? It’s literally 65F degrees in FEBRUARY in Pittsburgh! Like I was driving around yesterday with the window half way down. Then earlier today I was outside with just a short sleeve shirt on. So either Mother Nature finally got her act together OR she’s being truly cruel and secretly waiting to dump a crap-ton of snow on us. Either way I’m LOOOOOOOOOVING this weather!
Any who, how was your week? Mine wasn’t too bad. I got a lot done with work and around the house. Mr. Fantabulous and the flooring guy started on Friday prepping the downstairs to install the hardwood flooring. They’ve only put 1 1/2 full strips down as a guide and then they will do the rest this upcoming week. I’m suspecting it’ll take them a few weeks to finish but either way, it’s progress. What else? Oh… so Friday I went out to lunch at work with my one friend and ended up getting food poisoning. Nice, huh? I was so sick Friday and Saturday it was horrible. But I’m better now but man such an awful feeling.
So good news (at least for me and Mr. Fantabulous) starting Tuesday I’ll be working from home full time and will only head into the office when needed. I spent an hour or so Saturday setting up my temporary office. I’ll move all of my stuff into our real office once we relocate it downstairs. And I buy a new desk. Right now I run 3 large monitors and I need my space.
Today once I finish this post and one more post I’m making some popcorn, grabbing some snacks, Mr. Fantabulous and turning off all devices. He and I need some quality time and just ‘us’ time. This is the first weekend in months that I didn’t work my ‘day’ job and I just need a break. Earlier this morning I made 2 types of sweet bread though the one didn’t turn out as it just turned out pancake flat. I kinda ‘knew’ that was going to happen because the dough felt really wet but I was so busy doing 900 other things that I ‘shrugged it off’. Yeah, can’t do that. Now I’m sure it’ll taste amazing but it looks like it was run over. No worries, I’ll still snap a pic and post it on Instagram. Yes, even us professionals fail.
Speaking of Instagram I was super busy working on some new recipes. I’ve been testing out the Brod & Taylor Folding Proofer and Slow Cooker. OMG I’m in LOVE LOVE LOVE with this thing! YOU NEED THIS!!! The most tender/fall off the bone chicken I’ve ever made!
Also I’ve been roasting up tons of veggies for weekly meal preps. I made 3 types – Charred Parmesan Broccolini, Roasted Lemon Asparagus and Sriracha Honey Butter Roasted Cauliflower. I ate so much of these straight off of the pan!
