Get out of that same ol’ recipe rut and try one of these delicious and easy recipes this week! This week I highly recommend making the Grilled Fish Soft Tacos with Baja Cream Sauce and Butterscotch Sweet Potato Raisin Muffins!
Oh Sunday how I so wish you were Friday night. I need about 5 straight days of a Friday nights. What this means is I don’t have to work the next day and I have 2 straight days of not thinking. I keep telling myself…”only a few more months of this Lor, you can do this.” But it’s like it just never ends. However I keep looking on the bright side. Soon enough this house will be done and I can actually take a break. And about the same time my critical project at work should be wrapping up which means I can maybe take a breather (in the form of a vacation).
Hold on a sec… I’m dreaming out a vacation. It’s been a few years since we’ve taken a vacation. If I could go for 2 weeks I’d go to Italy and Paris. If I had 3 weeks… god I’ve love to go to Maldives. But if it’s for 7-10 days, I’ll head to Scottsdale. I just need sun and relaxation. But on my bucket list for sure, Maldives. God have you ever googled that place? It truly looks like heaven on earth. It’s known for its beaches, blue lagoons and extensive reefs – like over 1000 coral reefs! Though truth be told I’ve never snorkeled and the whole process of it scares/confuses me. It doesn’t make…sense. Plus also I’d freak out totally if something ‘touched’ me in the water. My luck a piece of seaweed would just barely graze my ankle and I’d have a heart attack thinking it was jaws. LOL
So what else… Saturday we finished up the Media and Billiard room flooring! This was HUGE for us! Now we still have a ways to go on the house but that room is ginormous. I’ll post pics on Instagram later today. We’re waiting on the boards to be dry enough before we walk in to take pics. Today Mr. Fantabulous is supposed to have band practice which means I may get a girls night tonight *crosses fingers*. I love the man dearly but I also really enjoy my ‘me’ time. Although I have to admit, he’ll often offer up to watch a chick flick with me just because he knows I’m into them.
OMG so speaking of Mr. Fantabulous if you didn’t see my post yesterday about him and my toaster oven let me give you the run down. So yesterday I went to make a bagel only to find that the door to our toaster oven wouldn’t shut. After he took it apart he found that the internal latch had broken. Being that it was a plastic piece I knew it couldn’t be fixed. Now this machine wasn’t cheap, $150, so needless to say I was rather ticked the insides were made really cheap. So I said “Okay, while I’m out I’ll pick up a new toaster oven (just a cheapy one).” The response was immediate “Um no, I’ll fix it!”
Being married to an engineer (mechanical) can be tough (because you can’t throw anything away because they will fix it) and also awesome (because they can fix stuff). I came home from shopping to a fixed toaster oven latch. So how’d he do it? He literally took the broken pieces down to his shop and fabricated a new one out of metal! I mean who does that??? Yeah, Mr. Fantabulous does!
That man never ceases to amaze me! Do you have a Mr. or Ms. Fixit in your life? Funny thing is, this man is EXACTLY like his father. Like we’re talking not the apple falling far from tree but between Mr. Fantabulous and Papa Fantabulous that apple never even fell from the tree!

My current obsession Peanut Butter Chocolate Chai Oatmeal
Recipe:
1 cup old fashioned oats
1 3/4 cup milk
3-4 tablespoon creamy peanut butter
2 teaspoon mini chocolate chips
1 tablespoon chai
- In a pan add in the oats and milk. Set the heat to medium. Bring to a slow boil, reduce to low and add in 3-4 tablespoon creamy peanut butter. Stir to combine.
- Cook for 5-8 minutes or until desired consistency ( I like mine thick).
- Remove from heat and top with mini chips and chai seeds

So with that I need to get my butt in the kitchen. I found some frozen langostinos in my freezer and they are just begging for a creamy lemon pepper pasta sauce! Have one fantabulous week!
