Oh hello, 3 1/2 day long weekend! Just look how sexy you are with your carefree attitude, your grilling scents and your tempting dishes. So I don’t know about you but this child is most definitely looking forward to time off. Now while most of you will be chillin’ at some cookouts I’ll be in full TKW mode as I NEED to get at least 2 months of posts typed up and ready to go before I have my surgery on the 9th. Thankfully I have a barrage of recipes done, I just need to edit the photos, type up the recipes and posts. It’s all good though. I can’t just abandon you guys for 2 months.
But this weekend we’re keeping it low-key; no plans, no cookouts. I just want quiet time ya know? But that doesn’t mean I’m not going to have all kinds of yumminess. I’ll definitely make some burgers and dogs but after making that Caramel Infused Apple Cheddar Chicken Burger, I’m not sure I could eat a plain beef burger again. It’s so flippin’ good people. And of course Deviled Eggs – gotta have deviled eggs. As for what else, who knows. Maybe I’ll make all of the stuff below and whatever we don’t eat, I’ll make freezer meals so while I’m recuperating, Mr. Fantabulous can eat.
Now there are a ton of recipes to choose from and you’ll see, some use the pressure cooker. Seriously why not use it this weekend? Save yourself a boat load of time and trouble. You could actually enjoy your party instead of slaving over a grill or oven. But no worries if you want to grill, go for it. You can make many of these on the grill or better, yet finish them on the grill. And yes you can most definitely make pizza on the grill.
So for your cookouts and BBQs, do you serve appetizers? I mean stuff OTHER than potato chips and pretzels? No? Oh, people… So I’m going to let you in on a cookout secret… Have real appetizers. Yes, have them. They don’t have to be elaborate but people like finger-type foods. There are several you can choose from and most, if not all, can be made in advance. It’s those little things that will make your cookout the talk of the town and make you the “must invite” person!

But before I end this post and give you the drool-worthy recipes I want to remind you and everyone that while we all love our 3-day weekend of no work, tons of food and beer that the purpose of this 3-day weekend isn’t about us at all – it’s about the men and women that have served our country or those that still do selflessly. They put the freedom of you, I and our family ahead of their own. They sacrifice so we don’t have to. This weekend thank a vet, say a toast, send them wishes and appreciate all that they do for us.
