Okay so let’s be real here when it comes to Sundays…they are both awesome and sad at the same time. How so? Well awesome in the fact that most of us get to sleep in and not have to deal with that stupid alarm clock. You get to snuggle a bit longer, you don’t have to deal with Monday traffic, work or putting on real pants. You can chill out all day in front of the TV or head out on all day hike. So what’s the downside? Um hello, the next day is Monday. You have to get up at some ungodly hour to the most annoying sound (alarm), you sit in traffic, deal with a million emails and do that whole work thing. And there’s that whole wearing real pants thing.
Now for me, my Sundays are spent mixed between laundry, yard work, and creating new recipes. And I can’t forget to mention the photo shoots, TKW administration stuff and oh yeah, “me” time.
These cookies are a result of my Sunday “me” time. You see I’m with Mr. Fantabulous 24/7 now that I work from home and even though I love that man more than anything I do need a break. Sure when I’m working he steers clear of me, I of him, but still, it’s the whole ‘absence makes the heart grow fonder’ thing. While he doesn’t ask me for ‘things’ I’m one that never stops making sure he has everything he needs first – food, help with the house or just cuddle time.
And that’s where Sunday nights come into play. That’s when I get 4-5 GLORIOUS hours all to myself. That’s when he has band practice. I can chill out, put on chick flicks, and eat ice cream out of the carton. Okay fine let’s be real here, it’s when I get weekly meal prep done, and dinner made for him.
So I finished up all of my stuff and was actually able to sit down and chill and that’s when I got a sweet tooth. Like I wanted something sweet but I couldn’t decide what. I wanted chocolate, crunchy, sweet and just …something. Oh sure I stood there pantries open staring at bags of chips, crackers and the like while my hand dug in the chocolate chip bucket a few times (yes I have them in bucket sizes). I’d go from the chocolate chips, to the toffee chips, to the coconut flakes and yes, even a few dry oats. It was like friggen grazing time at the zoo I tell ya. lol
I’d like to tell you I knew what I was going to make or had this pictured in my head but I’d be lying. This was literally a toss-everything-in-a-bowl, mix it up and eat the dough. Oh sure I baked the dough as cookies but I did eat about a cookie worth of raw dough. Do you eat raw cookie dough?
Yeah I’m a raw cookie dough lover. Yeah I know, raw eggs, blah blah blah. Listen I’ve been eating it for the past 20+ years and I’ve not gotten sick yet so I’ll take my chances. But I’ll be honest I believe you should taste your dough. See, for me 99.9% of the time, if the batter rocks, the baked goods will be just as, if not better. Now it’s a personal thing but that personal thing has never failed me. And that .01% that did fail, it was because I didn’t put enough fat in my cookie and it dried out before it was cooked.

So anyway, that’s where this cookie came from. The chocolate drizzle, totally optional (and yes you could totally go with a peanut butter drizzle if you wanted!) but I would highly recommend. Now full disclosure, Mr. Fantabulous did not like these cookies as he HATES bananas and chocolate in a baked good. I mean he cannot stand it.
So once the first tray was done, I put a couple on a plate (still warm), sat down in the recliner, and put on a chick flick. Even though I had only about 2 hours of “me” time, it was all I needed as well, okay I started to miss Mr. Fantabulous. The house is just too quiet without him here.
Ahhhh…. love *wink*

Ingredients
- 8 tablespoon butter, unsalted
- 1/2 cup light brown sugar, packed
- 2 ripe bananas, ~1/2-3/4 cup
- 1 large egg, room temperature
- 1 3/4 cup flour
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 cup old fashioned oats
- 2 cups chocolate chips
- 1/2 cup unsweetened coconut flakes
- 1/2 cup toffee chips
- 1/4 cup chia seeds
- 1/4 cup melted chocolate
Instructions
- In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and brown sugar. With the mixer on low, add in the egg and banana. Turn the mixer to medium to blend.
- In a bowl add the flour, soda, salt and oats. Mix to combine. Shut the mixer off, add in the dry ingredients then turn it on starting with low just to blend to combine.
- Add in the chocolate chips, coconut flakes, toffee chips and chai seeds mixing just to combine. Scrape down the sides, mix and then put the cookie mixture into a bowl, cover it and place it in the fridge for at least 2 hours.
- When ready to bake, preheat the oven to 375F rack in the middle. Line cookie sheets with parchment paper.
- Using a medium cookie scoop (about 2 tablespoon) place the cookie dough on the pan about 2” apart.
- Bake for 10-12 minutes or until golden brown around the edges. The cookies will still be somewhat soft on the pan. They will firm up on the pan as they cool. Once cooled on the pan, remove to a cooling rack and drizzle with melted chocolate.
- Store in an air tight container.
