Get out of that same ol’ recipe rut and try one of these delicious and easy recipes this week! This week I highly recommend making the Grilled Mahi Mahi Fish Tacos and Whiskey Pulled Pork Shepherd’s Pie with Cheddar Biscuit Crust!
Happy Sunday TKW Family! Gosh, can you believe it’s already the middle of summer? How are you spending your summer? Vacation(s)? Family reunions? Or just working and chilling out in the evenings? For me (us) we’re staying home. Traveling while injured is not fun and it’s not fair to Mr. Fantabulous that I limit our fun because of this stupid surgery. We decided that come Octoberish I should be okay enough to take a vacation.
I’m kinda bummed as our anniversary is next month and he’s asking what I want to do/how I want to celebrate. I’ve always told him on our 10th anniversary (we’ve been together though 21 years) that I wanted to tour Italy for 2-3 weeks but that won’t be possible right now; not with the way I’m feeling. So we’ll wait until early 2018 to go.
Now for him when I asked him what he’d like he gives me the normal “I don’t need anything as long as I have you” (yeah he’s a keeper) buuuuuuuuuuuuuuuut…. he’s been looking at lots (AND LOTS) of new guitar equipment. So I have a feeling that’s his not-so-subtle hint. #boysandtheirtoys lol
So I started a video course to learn how to make videos and edit them. That’s definitely something I’ve wanted to learn for a while but with how much I work I just didn’t have the free time. And once I’m able to type (with more than one hand) I want to finish the updates to the site. I’ve had a staging site for about 6 months that I’ve been working on but I have some more work to do on it before I push it to here. It’s a COMPLETE revamp of this site. Cleaner, fresher and definitely more updated.
I tried my hand at cooking (more than toast) last week. I begged (and begged) Mr. Fantabulous to get the mixer out so I could use up 3 ripe bananas. Of course “the warden” stood there watching me to ensue I didn’t do more than what I was supposed to. It feel good to be back in the kitchen; to feel useful ya know. I ended up going with Banana Blondies with Chia seeds, Coconut, Caramel and Toffee Crunch. Oh yeah… and a Brown Sugar Butterscotch Buttercream. Yes, all one-handed (with MUCH assistance). I’ll have the recipe and he even helped me set up the tripod and camera. It’ll take me a while to edit them as I have yet to master using the mouse with the wrong hand (left hand). So with my not really cooking “real” meals I’ve had to kind of go with what I have in the fridge/what I can do with one hand. Since we had leftover baked beans, brisket and baked potatoes I whipped up a SERIOUSLY DELICIOUS Stuffed Baked Potato with those ingredients. The pics people do NOT do it justice! So flippin’ good!
Then as a way to say ‘thank you’ to Mr. Fantabulous for taking amazing care of me I made him his favorite Cherry Pie Bars. For this I made a cherry pie filling and used the crust from my To Die For Apple Pie Bars (using almond extract instead of vanilla). I really wish I didn’t loathe cherries as this looks AMAZING! He absolutely loves it! *Click on the image to see more pictures!*
The cherry pie filling recipe is:
3 cups pitted cherries
2tablespoon lemon juice
1/2 cup sugar
2tablespoon corn starch
1/2-3/4 cup water
Stir and bring to a boil, reduce to medium low and continue to stir. Cook for about 15 min. If it gets too thick add a trace more water.
