Get out of that same ol’ recipe rut and try one of these delicious and easy recipes this week! This week I highly recommend making the Pressure Cooker Mom’s Classic Pot Roast with Savory Onion Gravy and the Creamy Cheesecake Strawberry Parfaits!
Happy Sunday, Monday, um… Tuesday TKW Family. I’m so sorry for getting this out 2 days late but so much has happened in the past 2 weeks and more importantly, last 3 days that everything is a blur. I’m beyond exhausted, my shoulder/bicep just needs fall off, I’m doing everything I can to not freak out and cry from both joy and fear (you’ll find out more in a bit). God, where do I even start?
So Mr. Fantabulous had to fly out to Arizona for work and since yours truly can’t drive, cook (hell I can’t even cut a piece of toast in half with a knife!) and pretty much can’t even dress herself without assistance I went too. Maybe it was a vacation but it didn’t feel like one though for the most part. He worked and I would stay at the resort either sitting by the pool (okay fine that was the vacation part) or sitting in the room with him to try to take care of him. When he wasn’t sick we’d go to a few local spots and I even got to meet up with Isabel and her friend, Vanessa, from Tasty AZ at one AMAZING restaurant for lunch. Seriously those 2 girls are like my West Coast twins as our food tastes are so similar that it was scary but exciting!
While we were there Mr. Fantabulous fell ill. We both thought it was just allergies but when he started having trouble catching his breath and lost his voice we went to an urgent type clinic. The doc said it sounded like just an upper respiratory infection so he put him on Prednisone, Tessalon Pearls (for coughing) and an inhaler. After about 3 days of taking it he started to feel better. At the same time little did I know that the man was conspiring behind my back with the resort staff. You see our 10 year wedding anniversary was approaching. That day, he woke up feeling much better however it was yours truly that felt like crap – headache, fever, just downright sick. Well the staff said “Oh Lori, there is some famous food critic here today and you’re going to meet him, have lunch and talk food.” I just looked at Mr. Fantabulous and he knew I felt like death. Well before I could say no, they said “Okay they’ll be by the room at 2:45 to pick you up.”
I wasn’t too happy and Mr. Fantabulous didn’t help matters much as he said “Oh honey that’s cool! Maybe it’s Chef Ramsey.” Well, okay, he first called him “Dave Ramsey” who is a talk show host that is a genius when it comes to managing your money and saving for your future. HIGHLY recommend listening to him. I just sighed and said “fine”. After breakfast we went over to the spa just to relax – well okay he goes to relax, I just sat by the pool to get some sun on this very, VERY pasty white body. About 45 minutes into I texted him and said I was heading back to the room as I just felt horrible.
About an hour later he came back to the room and said “Honey you need to start getting ready. Since it’s a nice place, we’ll have to get dressed up.” I picked up my head from the pillow and said “Honey, I really don’t want to go. I just want to lie in bed with you and watch tv. I just feel ‘blah’.” Now I should have suspected something was up by his next comment but I didn’t. He said “Baby, it’s totally up your alley. I’m not into that stuff but I think it could fun.” So I grumbled and got dressed. The driver drove us to the restaurant and took us to the back room, where the “food critic” was.
…there was no food critic and Mr. Fantabulous was beaming from ear to ear. Me, being clueless, was lost.
A few of the resort staff that have become like family to us were standing there and so was one of our friends that lived in the area. Michelle said “Lor so you’re probably wondering where the food critic is and what’s going on. Well there is no food critic BUT it is your 10 year anniversary.” Then it hit me! Mr. Fantabulous had been conspiring with the resort to surprise me renewal of our wedding vows. A gorgeous bouquet of roses, pretty balloons, streamers – the works. I immediately started crying as he totally surprised me. We went out on the patio overlooking the 18th hole to have our vows renewed all the while crying and sweating (it was 110F outside). I cannot believe, even while he was so sick, he still did this. I was truly speechless the rest of the night. That evening we had an incredible meal at the resort where he finally got to sample A5 Japanese Waygu steak. So I’m going to level with you guys.. it’s not cheap BUT it’s not cheap for a reason. It truly is the BEST beef/steak in the world. Like those cows have a better life than most humans!
All during dinner I kept welling up as I couldn’t believe he did that. Only God knows what I did to get so lucky to have him pick me out of all of the women in the world. ♥
The next day we flew home (Sunday). Now if you follow on Facebook you would have seen my post saying that the weekly menu would be late due to us flying all day and not getting home until 2am. I lied – we got home at 3am. I had every intention of posting it on Monday but Mr. Fantabulous took a turn for the worse. He was sicker than ever. I called one of our friends that lived in Arizona to find out what their symptoms where for “Valley Fever” and all of the symptoms he had, Mr. Fantabulous has. Living in Pittsburgh, this isn’t a common thing. However Mr. Fantabulous has had a severe degradation in his vision for the past 4 days. He describes it as “it doesn’t even feel like I have my glasses on. Everything is blurry.” Side note – 2 weeks before we went to Arizona he just had his eyes checked and his vision only changed slightly, to the point he really didn’t need new glasses. Needless to say it’s alarming.
Tonight we ended up going to the ER. Let’s just say I’m NOT happy with the laissez-faire attitude and care he got. When I gave the specifics of our trip and asked if they could check for that Valley Fever OR if they thought it was possible the doctor said “We can do blood work for that but I will tell you that it takes days if not weeks to get those results back.” An hour or so later he had a chest x-ray, orbital ct scan, EKG, blood work and urinalysis (though I don’t believe they actually did it since the urine sat on the counter in the ER room with me the entire time I was there – I never left the room!). Everything came back normal. The doctor even said “We checked for that valley fever and if he had it his blah blah blah would be high and show it now so I’m ruling that out.” I said “Um, didn’t you just tell me an hour ago that it would take days to weeks to get the results for that?” I was met with silence.
Now I’m not a doctor nor do I believe in Internet diagnosis or self diagnosis BUT if you’re a ER doctor and you tell me one thing then completely tell me something different an hour later I’m going to question you. <yeah, I’m not happy at all> Anyway, all she said was “You’ll need to call an Infectious Disease doctor and an Ophthalmologist tomorrow to get appointments.”
Right now it’s what, 2:05am and I’m typing this while checking on him every 30 minutes. I’m a wreck as he’s never sick; not like this. Sniffles and one bad cold a year but never like this. Thankfully, which sounds odd to say in this context as I almost died and this Infectious Disease doctor saved my life several years ago, I know of an ID doctor. I’m calling him tomorrow and praying he can take him in right away.
Anyway, I will talk more about the more amazing aspect of the jaunt to Arizona and hopefully post some pics (I haven’t even looked at any pics taken at our vow renewal) but for right now I need to focus on him. That man is my entire world.
