From the time I was 3 I can remember spending every Friday night either at my high school football stadium or at the away game. Having 4 older brothers that all were deeply-seeded in football we lived and breathed high school football. I can remember being an honorary member of the team wearing the smallest jersey they had (which was the length of a nightgown on me) and a scuffed up helmet that wobbled on my head. I would stand on the bleachers sipping my hot cocoa, cheering on my South Park Eagles as loud as I could and doing all of the cheer moves the cheerleaders were doing. I LOVE High School football! It’s what I was raised on. When I got old enough I joined the band for two reasons – because I loved to play the sax and because I got to be at the games.
The cold bleachers, the snowy nights where you’d shiver and wrap yourself in a warm blanket, numerous cups of cocoa and the lights of the field. God I love that. But back to these pizzas and more importantly about how the company came to be. Tony’s Pizza has been serving authentic pizzeria style pizza for over 50 years. Starting out as a local pizzeria shop in Salina, Kansas, Tony’s pizza has grown to a household name. That fact resonates so much with me. I love it when local pizzerias do well and stand the test of time. Since the 1960’s Tony’s has taken great pride in serving communities with layers of light, crispy, crunchy crust topped with sauce made from real tomatoes and covered in 100% real mozzarella cheese with all your favorite toppings.
Making these 2 delicious dishes are really simple and definitely one you can get the kids involved with! To make the Tony’s Pizzas simply follow the directions on the back of the box. I would say when it comes to cooking the beef, you definitely want an adult (or adult supervision) to do this since you’re dealing with the stove and heat. What I love about these nachos is that you get 2 types of meat – beef and chicken. The chicken, if you wanted, you could easily cut time and grab a rotisserie chicken, shred it or chop it up and add the seasoning to it. For me I just pressure cooked some chicken breasts then cut it down into small chunks. While it was still warm I added my homemade taco seasoning.
Once the meat is ready, you can get the kids involved as next comes the nachos assembly. For nachos, I’m a bit of a connoisseur/snob. I consider nachos tortilla chips with various toppings and shredded (melted) cheese. Plain chips with drizzled melted cheese sauce and jalapenos are “technically” nachos but I personally call them chips and cheese. And to be quite honest I prefer my cheese sauce on the side so I can dip my chip in it. I hate, hate, hate a soggy chip – or getting my fingers/hands/arms/whatever else gets in the way covered in nacho cheese.
Next, if you’re making what I consider “true” nachos you must, must, MUST layer them. What I mean by this is add half of your chips, add the toppings, cheese and repeat. You’re committing a Nacho-Fail if you pile all of your chips on the plate, add your toppings and heat/serve. Oh sure the top nachos are the Mack Daddy of nachos with a ridiculous amount of toppings but then what happens when those “golden” chips are gone? Exactly – you get plain ol’ chips. What’s fun about that? Nothing!
In creating this recipe I wanted to set it up that both items were done at the same time. Since the pizza I made takes 17-19 minutes, I put my pizza in for ~12 minutes at the recommended temperature and while the pizza was starting to cook I assembled our nachos. I used a quarter sheet pan but you can easily use a larger pan. Just be sure that the pan you use has sides to it. I wouldn’t recommend going more than 2 layers only because you want the nachos to be cooked all the way through and the cheese to be melted.
This type of meal – the pizza and tray of nachos is something Mom would have definitely made before we all gathered in the car and headed up to the high school. Mom was that “mom” to everyone. She was in the Football boosters and always was in charge of making the food at the concession stand. Her nachos were a hit as they were filling yet, just like pizza easy enough to hold in one hand while cheering our Eagles on with another hand. High school football for me was so much more than a football game. It was about school pride and community spirit. Everyone went to the game, everyone cheered and everyone supported. Throughout the years, even after my brothers graduated we still went to the games, as a family to support “our” team. The boys were family. Mom still worked in the concession stands and I still cheered as loud as I could.
As I got older and joined the band, you still had that sense of pride in your team, in your school, and in your community. The players would show the band their appreciation in return, folks would dance along to our halftime show and we, in return, would boost the team’s spirit with various musical montages. From the cheerleaders to the band, the players to the coaches, the parents to the entire community – everyone believed and everyone had school pride.
So next Friday night, when your high school football team has a game, whip up a few of these delicious Tony’s Pizzas and a batch of these Touchdown Nachos! Ingredients
- 1 Tony’s Pizza (Tony’s® Pizzeria Style Pepperoni Pizza and Tony’s® Pizzeria Style Sausage & Pepperoni Pizza are my favorite!)
- 1 20 ounce bag of Tortilla chips
- 1 pound ground beef (80/20)
- 3 cups cooked chicken breast, cut small (*see note)
- 6 tablespoon Taco Seasoning (see below)
- 2 tablespoon tomato paste
- 1 cup water with 2 tablespoon removed (you don’t want a full cup)
- 3 cups shredded Colby jack cheese
- 1 15 ounce can black beans, rinsed and strained
- 1–2 cups diced fresh tomato (about 1–2 large tomatoes)
- 1/2–3/4 cup red onions, diced small
- 3 tablespoon fresh cilantro, chopped
Taco Seasoning
- 3 tablespoon chilli powder
- 1/2 teaspoon cayenne
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika (smoked if you have it)
- 3 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to the temperature on the back of the Tony’s Pizza boxes. Line a quarter-sheet pan (or larger rimmed baking sheet) with foil, lightly spray and set aside.
- In a container mix together all of the taco seasonings, set aside.
- In a large skillet over medium-low add the ground meat and 1/4 cup water. While the meat browns gently break it up into smaller chunks. When completely browned (10-12 minutes), drain the fat from the meat and place the cooked meat back into the pan.
- Add 3 tablespoon of the taco seasoning, tomato paste and 1/3 cup of water. Reduce the heat to low and mix to combine. Stir the meat mixture occasionally and remove from the heat once the meat mixture thickens and no water remains. Remove the mixture from the pan and set aside.
- In the same pan the beef was just in add the warmed chicken, remaining ~1/3 cup of water and 3 tablespoon of taco seasoning. Reduce the heat to low and mix to combine. Stir the meat mixture occasionally and remove from the heat once the meat mixture thickens and no water remains.
- While the meats are cooking (or even resting) put the pizza into the oven for 12 minutes (trust me on this). While the pizza is cooking, assemble your Touchdown Nachos.
- Add half of the tortilla chips in an even layer. Next, add half of the ground beef mixture and chicken mixture. Follow this with half of the black beans and half of the cheese.
- Repeat that entire layer. This should take you roughly 13 minutes.
- At this point, open the oven, move the pizza to one side of your oven and place the pan on the other side of the same rack. Bake for ~5-6 minutes or until the shredded cheese is melted and your pizza is fully cooked. If the pizza is done but the nachos are not, remove it from the oven and leave the nachos in for a few more minutes until the cheese if fully melted.
- Remove the pizza from the oven and while someone is slicing the pie, someone else can top the nachos with the red onions, tomatoes and cilantro.
Notes
For this recipe I poached 2 chicken breasts using my Perfectly Poached Pressure Cooked Chicken Breasts recipe. If you want you can easily just buy a roasted whole chicken and chop up the meat for that.
