Get out of that same ol’ recipe rut and try one of these delicious and easy recipes this week! This week I highly recommend making the Pumpkin Beef Chili and the Sheet Pan Savory Brown Sugar Pork Tenderloin with Hasselback Potatoes and Stuffed Mushrooms!
Twas’ the week before Christmas and all through my house construction crap was everywhere. So not ready for Christmas. What about you? I swear it just sneaks up on you. I need like 3 more weeks and then I’ll be ready ..maybe. But I know me and some how, some way I’ll make it work; I always do. So pardon my post today if it’s brief as I have a TON Of stuff to get done today just to keep on track. This was past week wasn’t too bad; busy as usual. I did, however, pick up 3 stools for the bar downstairs which is one step closer in getting the downstairs done. But good lord we have so much work to get done it’s not even funny. I’ll be honest I’m not sure how we’re going to be ready to have it all done and on the market by end of March/early April. Anyone local want to help? I’ll feed you!
This past weekend was fun. I went out with some girlfriends Friday night for dinner and to a dueling piano bar. God I can’t tell you the last time I went out with the girls – has to be at least 9 months. But it was so needed. Don’t get me wrong I love spending as much time as I can with Mr. Fantabulous but some days you just need to let loose with the girls. It was funny though as about 8pm I got a text with Mr. Fantabulous showing me what he made for dinner – a sad bowl of Cheerios. LOL Yet the man neglected to share the picture of the plate of Swedish Meatballs or pizza he also had while I was gone. LOL
Saturday was so much fun! Well okay the morning not so much as I spent 4 hours making struffoli to take the fantabulous in-laws plus 2 types of biscotti. For those that don’t know what struffoli is its deep fried little dough balls (that really have no taste) then you then coat in a sticky honey mixture and cover with 3 million sprinkle balls. Now making the dough takes maybe 5 minutes but it’s the rolling, cutting into teeny little pieces and then frying that takes FOREVER! But I have to say it’s well worth it because when we walked in and Papa Fantabulous saw the huge tray I was carrying of it he squealed like a little kid. His eyes teared up and he couldn’t stop telling me how much he loved me. Mama Fantabulous wasn’t left out as I gave her a pressure cooker plus the biscotti.
I always have so much fun when I’m there. I’m so blessed. Then the question came up about Christmas – were we coming there for dinner. <sigh> Christmas dinner is something I’ve always had at my house for years. Christmas is the one day I really don’t like going anywhere. That’s always been our day. Selfish? Perhaps but it holds such a more personal meaning to me. That’s the day Mr. Fantabulous proposed. So when Mama Fantabulous looked me in the eye and asked if we were coming, I could see the look in her eye where I knew she really wanted us there. So for the first time in God, decades, I’m going to someone else’s house for Christmas. I can’t tell her no. Plus I want to spend as much time with them as I can, you know?

Apparently you need 10k followers on there in order to be seen as a business account. It’s funny I get million of hits monthly but for some reason my instagram numbers are lacking.
So I posted a BBQ Beef & Chili Cheeseburger that seriously I could have eaten 4 of these things they were so good! That chili recipe will be posted this week – really!
Then there were these Swedish Meatballs that I made for a client. That recipe will also be posted this week!
Then yesterday morning – the start of the struffoli cutting. This is what takes FOREVER!
But as you can see (you can click the image and the arrow for more pictures!), the end result is truly stunning! I was “informed” that for Christmas I need to make this again…plus fudge, brownies, macaroons and 8 other types of goodies. LOL
And with that, I need to get my butt moving as I have a TON of work to get done. Wishing you one fantabulously amazing week!
