Happy Sunday and Happy Labor Day weekend TKW Family! This weekend marks a very important time in my (our) life/lives. This is the first weekend in 9 years that we have nothing to do, no responsibilities other than normal household stuff. While most folks would be upset to have nothing to do we are beyond ecstatic! This means that we have zero trips to Lowe’s or Home Depot, zero painting, zero plastering, zero electrical work. We have ZERO HOUSE CONSTRUCTION work to do! Like we can have a normal life! It’s such a huge thing for us that we found ourselves looking for projects around the house. We’d then stop one another and would just say “No, we deserve a break. We deserve some down time. The house is done now enjoy life!”

And that’s exactly what we’re doing. Friday night we watched 2 movies while enjoying pizza. We shut off the world and just enjoyed the fruits of our labor. Saturday he hung out with one of his buddies for a bit while I actually went shopping for nothing LOL I went to HomeGoods just to browse and have some retail therapy. God, it’s been soooooooooooooo long since I’ve done that. Last night we paid the Fantabulous in-laws a surprise visit and watched another movie with them. Today we’re actually meeting up with friends to check out a local band.

Last week I was able to get back into my preview mode of recipes and creations! This Best Ever Oven Fried Chicken was INSANE! I’m going to tell you what guys, this Oven Crisp Baking Tray from Nordic Ware is hands down THE BEST pan I’ve ever used to make oven fried foods!

Growing up in my house, as poor as we were, potato chips were a luxury which meant even the crumbs at the bottom of the bag got used. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I’ve been making potato chip crusted chicken tenders for decades and I have to say I’ve perfected the technique so the chips stay on the chicken when they are baked. I’ll share this at some point but tonight I want to give a shout out to 2 companies: @ruffles potato chips for their new flavor (Mozzarella ‘n Marinara) as they made THE BEST chicken flavor I’ve ever had! Next a huge shout out to @nordicwareusa for their Oven Crisp Baking Tray as it’s phenomenal! Then there’s this test recipe I’m working on now for a Tomato Basil Parmesan Focaccia bread I’m working on. All I know if it tastes as good as it’s smells, you guys are going to go NUTS over it!

I could not have made a more perfect Focaccia! The smells from this Tomato Basil Parmesan Focaccia are incredible!
