Growing up Catholic, meatless Fridays during Lent was most strictly adhered to. HOWEVER… one can only consume so much grilled cheese, tuna casserole (hot/cold) and plain cheese pizza. Mom was, that respect, a creature of habit. Don’t get me wrong, she made a killer tuna casserole (to which I still make today) and pizza, with any topping, rocks (well okay.. maybe not olives – I hate olives) but still, I like a variety.
