These Weekly Menu recipes allow you to get out of that same ol’ recipe rut and try some delicious and easy dishes! This week I highly recommend making the Crispy Chicken Parmesan, the Pickle Pinwheel Pops (Tortilla Ham Rollups), and the Crock Pot Eye of Round with Mushroom & Onion Gravy!
Happy Sunday TKW Family! Does this year seem to be flying by or is it just me? I mean wasn’t it just Christmas and Valentine’s day? I swear the older I get, the more I lose track of time. I hear stories from many of you that have already retired that there are times when you literally have no clue what day of the week it is. I wonder how I’ll react when I’m finally retired.
For me, I’m thinking it’ll be a hard adjustment to be honest. I’m always working – have been this way since I was 12 and got my first babysitting job. While other kids were out enjoying the summer I was working. It was all by choice mind you but even when I was supposed to be relaxing, I didn’t.
Heck, you guys know how I am when I have surgery (because lord knows I’ve had more than my fair share of them). I am the worst patient ever. Not that I’m needy or whiney but rather I can’t just rest and relax. It’s just not me. So when I “retire” I truly don’t think I’ll not work. Oh sure maybe the first few months I’ll bask in the glory of being retired – no alarm clocks, no having to get out of bed for work, no real responsibility other than brushing my teeth, putting on clothes and eating.
I’d love to travel the world then and just take my time. Many of us that work still are limited by how much time we can take off albeit 1 week or 2 weeks at a time. And it’s in that time frame where we feel compelled to cram as much stuff in as we can. I don’t know about you but I find that so much exhausting than enjoyable. By the time my “vacation” is done, I’m ready for an actual vacation of rest.
Chicago Bound
So I’m Chicago bound tomorrow for a food conference for a few days. I’ll be there on behalf of United Fresh and Kitchen Play where I will be engaging with brands and clients learning about the newest fresh produce, better-for-you products and the tech innovations that support growth, development, and so forth.
I absolutely love working conferences like this as it gives me the ability to speak directly with the brands and find out not only what new and delicious item they are coming out with but also learn about their practices, how they work with the farming community and sustainability. These conferences let’s me view items as both a Chef and Engineer. From the technology and science used to give you say the very best potato each and every time to the ways these potatoes can be used in our homes. You’ll want to definitely follow me along on both Instagram and Twitter as I’ll be sharing the latest and greatest items to hit the markets soon!
Also – any restaurant recommendations while I’m there? Obviously pizza – but who makes the best Chicago pizza?
