These Weekly Menu recipes allow you to get out of that same ol’ recipe rut and try some delicious and easy dishes! This week I highly recommend making the Porcini Pasta with Mushrooms, Peas and Lardons, the Instant Pot Asian Sticky Ginger Thighs, and the Butterscotch Sweet Potato Raisin Muffins!
Wasn’t it just Thursday??? And wasn’t it also just Memorial Day? Seriously, is it me or does it seem like time is just flying by? Like yesterday, when I posted the 30 recipes to celebrate Labor Day I was kind of in disbelief that it was September next week. I actually had to check my calendars…3 times!
But time marches on… like it or not cooler temps will be here, at least in the ‘Burgh, soon enough. Time to break out the hoodie, fuzzy socks and comfort recipes.
Surprises coming up!
So while I’ve been recuperating from surgery, I’ve been working on a few pretty awesome things for you guys. Giveaway, what? Let’s just say this one (or three…wha???) will be super fun and you’ll definitely want in on it! Plus I’ll also be giving extra details about them in your newsletter (so make sure you open and read it) and also in the TKW Foodie Facebook group!
Last Week Eats and Pizza!
So as most of you know, I pretty much can’t cook still due to my surgery. I’ll try to do somethings one-handed but even with that, it’s tough. Thankfully Mr. Fantabulous is there to help me in the kitchen. Last week I showed him how yo use the Instant Pot to make my Thick Cut Pork Chops with mashed potatoes. When it was done he was pretty blown away that it only took a few minutes and just how tender the chops were AND it was a full meal made in a single pot.
As you know Friday night is pizza night, no big surprise there. Well as of late I’ve been working on perfecting a few of my old family recipes on other types of doughs. On here I’ve shared a few types of pizzas on here from the Sicilian pan, Skillet pan, hand-tossed, and flatbread. But I’ve been wanting to really hone my craft and work on the Detroit-style. See true Detroit style, and honestly, any pizza, in all honesty, has a lot of science behind it to get that perfect recipe. From hydration to fermentation, it can be pretty complex. With Detroit dough, you want that 1-2″ pan crust but you don’t want it to be heavy.
Well Friday the Fantabulous in-laws came up for the day. Thankfully the dough was ready to be baked after a 5-day long ferment. As Mama helped me prep and bake it, she said that Dad wasn’t a big fan of “pan” pizzas as they were always too heavy. I just smiled as I had a feeling he’d like it but if he didn’t I always had cereal. lol, Long story short and 4 slices later, it was pretty evident they loved it. Then the talk came about opening up another pizzeria. Or at the very least, offering lessons on how to make pizza,
So is this something you guys would be interested in? I’ve always wanted to have part of my “bistro” set up to offer classes. Since the house still hasn’t sold, and I really don’t want to put my dream on hold any further, maybe I should look into something here?
