Happy Sunday TKW Family! And just like that, it’s fall. Like legit fall and not this Julytober crap we’ve been having. I mean we’re talking going from shorts and a tank shirt straight to a hoodie and leggings. Last week I left Pittsburgh when it was 87F, arrived in Albany New York to the tune of 53F and rain. The nights went to 36F and when I flew home to Pittsburgh I think I brought the cold weather with me as this weekend I don’t think it’s gone above 53F. #sorrynotsorry
Arctic Apples, CIA and Apple Picking
Last week I was with my friends from Arctic Apples for a couple of days around the Poughkeepsie/Hyde Park area in New York. I first met these folks last April at a conference and immediately intrigued about their products. They produce a nonbrowning apple plus the most AMAZING “Apple fries” called Apbitz I’ve ever had. They were able to create a non-browning apple by identifying not only the gene that causes browning on an apple but greatly reduces/eliminates the entire gene strand. What this means is you can cut one of their apples, exposing the flesh to the air and let it sit out on the counter overnight (no lemon juice or covering) and the next morning it will look perfect. No browning etc.
By removing/reducing the enzyme called Polyphenol Oxidase (PPO), they were able to create 2 new types of apples (Arctic®Granny and Acrtic®Golden). There is no change in taste, structure, usage or feel. They have a 28-day shelf life and are NOT treated with those chemicals that other companies use when you buy packaged cut apples. Seriously, read the labels.
While in New York, we spent the day at the Culinary Institute of America showcasing the various ways to use apples as well as their Apbitz. I had an absolute blast. Though I couldn’t do much in the kitchen because I’m still in a cast, I still had so much fun. Our final day we hit up a local research apple facility that showed us their apple orchards, spoke with us about their practices, what apples are “trending” and various threats apples and the trees were currently facing.
