This riced cauliflower is gluten-Free, healthy, and absolutely delicious! Made in under 20 minutes and perfect as a side with your favorite Mexican meal, in a wrap, or as-is!
Grab Your Ingredients
This is one of those – you can use freshly riced cauliflower or grab a bag of frozen stuff. The only stuff you can’t substitute is the fresh cilantro.
- Cauliflower – 4 cups freshly riced or a bag of frozen. 4 cups are approximately equal to a medium-large head
- Cilantro – no there is no substitute
- Limes – fresh limes and zest
- Seasoning – kosher salt, black pepper, garlic powder, and onion powder
From Florete To Rice
If you opt to go with fresh cauliflower, simply cut the head into florets, pop them into your food processor, and pulse until they resemble rice.
Alternatively, you can use a box grater and grate the cauliflower as well. Stuff
Grab Your Skillet
- To a large skillet over medium heat, add some olive oil. Once it starts to shimmer, add the ingredients and stir.
- Saute this for about 5-7 minutes until the liquid from the cauliflower has dissipated and the liquid from the lime juice is infused.
- Remove from the heat, add your cilantro, and taste for seasoning.
Prevent Soggy Cauliflower Rice
Do NOT reach for a lid. You are not steaming it, you are sauteeing it. The heat will help the cauliflower emit its liquid and the heat from the pan will help dry up the liquid.
The lime juice and seasonings in the pan, as they heat up will get drawn into the cauliflower rice giving it the most amazing flavors!
Ways To Serve Cilantro Lime Cauliflower Rice
I so love this rice as a side dish or honestly, just as-is. Below are a few of my favorite ways to serve it:
- Rice Bowl – Add it to the bottom of a bowl topped with Beef or Chicken Barbacoa, salsa, avocados, and pickled onions
- Buritto – this rice stuffed in a burrito filled with Shredded Mexican Chicken, black beans, radishes, and topped with queso
- Salad – mix this in with my charred corn and shrimp salsa for an amazing salad!
Additions To Cilantro Lime Cauliflower Rice
Truthfully you can absolutely make this your own.
- I’ve added taco seasoning in place of the other seasonings
- I’ve boozed it up by adding some tequila with the lime juice
- Red Pepper flakes, caramelized onions, and shredded beef make this one amazing entree

Ingredients
- 4 cups prepared riced cauliflower (fresh or frozen)
- 1 Tablespoon olive oil
- 3 Tablespoons of fresh lime juice (~1 1/2 limes)
- 3/4 cup minced fresh cilantro (1 large bunch)
- 1 teaspoon kosher salt
- 3/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions
- In a large skillet over medium heat, add the olive oil. When the oil starts to shimmer, add in the cauliflower, lime juice, salt, pepper, garlic powder, and onion powder, and stir. Cook for 4-7 minutes or until the cauliflower is soft but not mushy. Remove from the heat and stir in the cilantro. Taste for seasoning
