Grab Your Ingredients
This recipe only requires a few ingredients.
- Cored Jalapeno Peppers
- Cheese – cream cheese and Colby Jack (but you can use your preference)
- Green Onions
- Crispy Bacon
- Chupacabra Fajita Seasoning
The only special equipment you need is a BBQ Jalapeno Popper Grill pan. Because I prefer my poppers whole, they need to stand up to cook.
Mix It Up!
As you see in the video I mixed this by hand. As long as your cream cheese is super soft there is no need for an electric mixer. However, you can absolutely use one!
Fill Your Peppers
I found the easiest way to stuff these is to use a thin offset spatula. Simply grab a teaspoon of the mixture, stuff that into the pepper then repeat.
Chef’s Tip
When you fill these, be sure to leave some room in them as the filling will expand just like the pepper will slightly. This way you’re ensuring not much overflow.
Grill To Perfection!
- Place the filled popper pan onto the indirect side of the grill and grill for ~20-25 minutes or until the peppers are blistered, softened and the filling has melted.
- Chef Note: depending on how your grill is set up, you may need to rotate the BBQ Jalapeno Popper Grill pan 90 degrees.
Let It Cool First
Trust me, I get it. You’re going to want to dive in right away to devour one but trust me on this… it’s best to let it rest for a few minutes so the filling is no longer molten hot and you can remove the cooked peppers.
Recipe Substitutions and Additions
There’s not too much you do to substitute pepper-wise however IF your grill pan supports larger peppers, you can use other peppers.
- Cheese – any cheese that melts works. Pepperjack, Cheddar, Manchego, and so forth would all work
- Veggies – add minced jalapenos or even chipotle peppers to the filling mixture to add more heat
- Bacon – it’s kind of recipe standard but hey, if you don’t eat it, by all means, leave it out. Try spicy cooked Italian sausage instead

Ingredients
- 18 cored Jalapeno Peppers
- 8 ounces cream cheese, softened
- 1/3 cup chopped green onions
- 1/3 cup cooked bacon, chopped
- 1 1/2 teaspoons Chupacabra Fajita Seasoning
- 1 1/4 cup shredded Colby Jack cheese
Instructions
- Preheat the grill to 400F and set it up for indirect heat.
- In a large bowl, mix the cream cheese, green onions, bacon, and Chupacabra Fajita seasoning until combined, Add in the cheese and mix to combine thoroughly.
- Fill the jalapenos with the filling. Leave a little room as they will expand as they grill
- Place the filled jalapenos in a Poppers Grill Rack on the indirect side. Grill for 20-25 minutes or until the peppers are blistered slightly and softened. Depending on your grill, you may need to rotate the grill rack halfway to ensure even grilling.
- Remove from the grill and allow to cool a minute or two before transferring to a plate and eating.
