Nachos With A Twist!
My Mom was a kitchen magician when it came to transforming leftovers into something new and exciting. However leftover pot roast only ever became hot roast beef sandwiches or pot roast soup.
With this recipe, I’m tapping into my Mom’s magic and creating a super fun and delicious spin on nachos
This recipe is what started it all – my Pot Roast Breakfast Hash. It was a Saturday morning, late to be honest, and I needed to clean out the fridge to make room for more recipes that I was making that day.
The above picture was the first iteration of that dish. Since then, I’ve made it countless times, topping it with dippy eggs, adding pot roast gravy, cheese sauce, more veggies, and pretty much whatever else I could find in the fridge to use up.

What I love about this recipe is that you can make this with what you have on hand. The only real requirements are leftover pot roast and home fries.
- Crispy Home Fries *optional fried onions and peppers
- Tortilla Chips or Tortilla Cups
- Freshly Shredded Cheese – cheddar, pepper jack, and/or Monterey jack work well
- Green Onions
Nacho Deliciousness
I get it, when we think of nachos we think of the traditional Mexican style – seasoned beef, salsa, avocado, and so forth. But with me, I don’t play by the rules.
Game Day & Brunch Vibes
With football season kicking off, these are perfect for game-day eats! For game day, I suggest you go with my smoked chuck roast recipe. That smokiness pairs perfectly with the nachos and an ice-cold beer!
If you’re hosting brunch, this is an amazing savory appetizer.
Assemble The Nachos
- Preheat the oven to 350F. Line a large rimmed baking sheet with parchment paper. In a bowl, mix both cheeses; set aside.
- Place the tortilla chip cups on the pan. *If using tortilla chips, place half of the chips in a single layer.
- To each cup, add some pot roast and a few home fries, with veggies. Drizzle on some pot roast gravy and top with cheese. *If using chips, top with half of the home fries, half of the cheese mixture, and half of the gravy (if using). Create another layer of chips, and top with the remaining pot roast, home fries, gravy, and cheese.
- Bake the cups/chips for 8-15 minutes or until the cheese is melted and the chips are golden brown. Remove from the oven, top with green onions, and serve immediately.
Recipe Substitutions & Additions
The beauty of these nachos is you can add whatever you want to it. My biggest advice is to go with the same flavor profile that your beef is in.
- Veggies – black olives, chopped tomatoes, avocados, fresh red onions, banana peppers, jalapenos, charred corn
- Queso – go over the top cheesy with some queso sauce

- 3 cups prepared pot roast
- 2 cups prepared home fries *with sauteed onions/peppers
- 1 16 ounce bag of crispy tortilla cups (chips also work too)
- 3 cups freshly shredded cheddar cheese
- 3 cups freshly shredded Monterey Jack
- 2 green onions, chopped
- *1/2 cup pot roast gravy (optional)
