Transform your leftover pot roast into a mouthwatering dish. Crispy home fries, tortilla chips, and melted cheese come together in this unique twist on classic nachos. It’s time to rethink how to enjoy your leftovers.
1. Preheat the oven to 350F. Line a large rimmed baking sheet with parchment paper. To a bowl, mix together both cheeses; set aside.
2. Place the tortilla chip cups on the pan. *If using tortilla chips, place half of the chips in a single layer.
3. To each cup, add some pot roast and a few home fries, with veggies. Drizzle on some pot roast gravy and top with cheese. *If using chips, top with half of the home fries, half of the cheese mixture, and half of the gravy (if using). Create another layer of chips, top with the remaining pot roast, home fries, gravy and cheese.
4. Bake the cups/chips for 8-15 minutes or until the cheese is melted and the chips are golden brown. Remove from the oven, top with green onions and serve immediately.
