The Perfect Anytime Salad
This salad is a mixture of sweet and savory with that hint of pepper from arugula. Candied nuts are added for that much-needed crunchification and a savory maple Dijon vinaigrette to marry the flavors all together.
Grab Your Ingredients
What I love about this salad is that you can use whatever fresh fruits are in season. Since it’s summer now I went with fresh berries and peaches. In the winter, go with pomegranate seeds, pears, and apples for example.

What I love about this salad is that it comes together in mere minutes. I think the maple Dijon vinaigrette takes the longest to make (and that takes maybe a minute at most).
A True Showstopper!
Now you don’t have to layer the salad like I did but honestly, when it’s layered it’s just so beautiful! I prefer to serve the candied pecans and maple Dijon vinaigrette on the side as not everyone likes the same amount of dressing (or nuts for that matter).
Plus if there are leftovers, by having the dressing on the side, the salad doesn’t get wilted/soggy.
Assemble The Salad
- Make the Maple Dijon Vinaigrette; set aside.
- In a large serving bowl, add half of the arugula, fruits, cheese and meat.
- Repeat with another layer using up the rest of the ingredients.
- To serve, I prefer to allow folks to add their own vinaigrette and nuts over top.
Recipe Substitutions & Additions
I have made this salad so many ways using what’s in season and also if I want to make it a meal or keep it as a side dish
- Greens – you can also add baby spinach and kale. What I love about the arugula though is the pepperiness it adds to the salad
- Fruits – as I mentioned above, go with what you like and what’s in season. Nectarines and plums are amazing in this. Pears, apples, pomegranate seeds, and dried cranberries are incredible here
- Nuts – you can omit or go with your favorite nut. And if you want to cut back on the sugar, don’t go with candied nuts but rather toast them slightly
- Prosciutto – you can omit or try Speck, cooked bacon, or crispy pancetta
- Make it a meal – add in grilled shrimp or cooked chicken
- Grains – add in cooked quinoa or wild rice. Crispy quinoa is super yummy in it

Ingredients
Arugula Berry Peach Feta Salad with Prosciutto & Candied Nuts
- 5 ounces baby arugula
- 1 large peach, pitted and sliced
- 1 cup fresh blueberries
- 2 cups sliced fresh strawberries
- 1 cup crumbled feta cheese
- 4–6 slices of prosciutto, roughly torn
- 1 cup candied pecans
Maple Dijon Vinaigrette
- 1/2 cup olive oil
- 1 large shallot, chopped
- 2 Tablespoons Dijon Mustard
- 1 Tablespoon fresh lemon juice (or apple cider vinegar)
- 2 teaspoons balsamic glaze
- 4 Tablespoons maple syrup
- 1/2–1 teaspoon sea salt
- 3/4 teaspoon black pepper
Instructions
Make The Vinaigrette
- In a food processor, add all of the ingredients (start with 1/2 teaspoons of salt first) and mix until well combined. Taste for seasoning.
- Serve immediately or store in a lidded container in the fridge.
Assemble The Salad
- In a large serving bowl, add down half of the arugula followed by half of the peach slices, strawberries and blueberries. Sprinkle over half of the feta and half of the prosciutto.
- Add the next layer by adding the rest of the arugula, peach slices, strawberries, blueberries, feta, and prosciutto. Sprinkle on the candied pecans.
- Either drizzle the vinaigrette over top or serve on the side. *Note you may have extra dressing
