Potato Chip Lovers UNITE!
I’m not a big sweet eater but man, give me a bag of chips and that sucker is a meal for me! This recipe came about from an event I was cooking at featuring the Yoder Smokers YS640.
These chips were THE HIT of the event! I had so many folks coming back for seconds and thirds! So many wanted the recipe that I knew I had to post it. Trust me, one bite is all you’ll need and you’ll never look at potato chips the same way again!

I’m kind of embarrassed to share this as it’s so easy to make but then they say that a sign of an amazing recipe is that it’s uncomplicated.
- Rippled Potato Chips – I found Costco’s Kettle Chips worked the best but any rippled chip will work
- Seasonings
- Parmesan Cheese – must be finely grated (think Sprinkle cheese)
- Neutral Cooking Spray – canola, avocado, or grapeseed oil work
Prepare The Yoder Smokers YS640
- Preheat the smoker to 250F with a fruit wood pellet.
Smoked Potato Chips Recipe Steps
This recipe came about as I needed a lighter side dish to serve with my Smoked Thanksgiving Gobbler Sliders. Since there were going to be other vendors there, I wanted something memorable, and easy to make but packed in so much flavor.

- Once the seasonings are all mixed, place half of the chips in a single layer in a pan. Lightly spray the chips with neutral cooking spray. Sprinkle on half of the seasoning mixture and half of the Parmesan cheese. Gently toss/mix with your hands to coat.
- Add the remaining chips on top, spray, and add the rest of the seasoning and the rest of the cheese. Gently mix to coat.
- Cover with foil and place in the preheated smoker for 30 minutes. After 30 minutes, remove the foil and smoke for another 30 minutes.
Pellet Smoked Potato Chips
Folks I’m telling you, these chips exceeded even my imagination by how incredibly flavorful they were! Since I covered them half of the time while cooking, they had a mild smoke flavor which I loved.
The smokiness of the chip paired so amazingly well with the seasonings and that parmesan cheese. I found they tasted best once they ‘cooled’ after smoking. They almost get crunchier but not hard. All I know is that they were/are PHENOMENAL!
Recipe Substitutions & Additions
So far I’ve only tried a few different sets of seasonings as well I can’t exactly eat anything but potato chips even though I would for you guys. I mean it’s for the sake of science, right?!
- BBQ – yes I know they sell BBQ potato chips but I’m telling you it’s not the same as smoked BBQ chips! I personally loved Chupacabra Original Seasoning. I did a half batch with just the seasoning and another half with the seasoning plus the parmesan cheese. Both were amazing
- Parmesan Peppercorn Ranch – homemade buttermilk ranch seasoning, crushed peppercorns and parmesan cheese
- Buffalo – just buffalo seasoning and a light coating of spray. I loved these with ranch dip!
The Best Smoked Garlic Onion Parmesan Potato Chips

Ingredients
- 16 ounces of rippled potato chips *I found Costco’s Kettle chips were the best
- 1 Tablespoon granulated onion
- 1 teaspoon garlic powder
- 1/4 cup grated Parmesan cheese
- Neutral cooking spray (like canola, avocado, or grapeseed oil)
Instructions
- Preheat the smoker to 250F with a fruit wood pellet. Whisk the garlic and onion seasonings; set aside.
- In a heat-safe pan, place half of the chips in a single layer. Lightly spray the chips with neutral cooking spray. Sprinkle on half of the seasoning mixture and half of the Parmesan cheese. Gently toss/mix with your hands to coat.
- Add the remaining chips on top, spray, and add the rest of the seasoning and the rest of the cheese. Gently mix to coat.
- Cover with foil and place in the preheated smoker for 30 minutes. After 30 minutes, remove the foil and smoke for another 30 minutes.
- Remove from the smoker, plate, and enjoy.
- Store any leftovers in an air-tight container.
