It’s funny as I didn’t start liking asparagus until I met Mr. Fantabulous. Once I realized that you didn’t have to boil it to death (like how my Mother did for Brussels Sprouts) but rather you could grill or roast them, I was in LOVE! What I love about this recipe, besides how amazingly delicious it is, is how EASY it is. They are simple ingredients that you probably already have on hand. And if not, a quick trip to the local store is all you need.

How to Trim Asparagus
The first thing you want to do is trim your asparagus. Now, you have two ways to do this:
- Snap: Hold the stalk firmly near the base and bend it until it snaps naturally. Repeat this for all the stalks
- Cut: Place the asparagus stalks on a cutting board and evenly line up the bottoms. Take a Chef’s knife and trim the bottom 1-2″ or just to where the white meets the green part.
How to Prepare Baked Asparagus
This dish took maybe 5-10 minutes to prepare (including the trimming).
- After the asparagus are trimmed, whisk together the oil mixture.
- Drizzle it all over and then toss the asparagus gently to coat in all sides. Before putting the tray into the preheated oven, do your best to get them in a single layer.
- Once the asparagus are fork tender, remove the pan from the oven and, since they do have a good bit of water in them, remove them from the pan temporarily, remove the liquid from the pan and place the asparagus back in a single layer.
Adding Boursin to Roasted Asparagus
- Put the oven to broil then sprinkle on the room-temperature Boursin.
- Place the pan under the broiler for a few minutes just until the Boursin starts to barely and a few charred spots appear.
- Serve Immediately.

- Do I have to trim asparagus?: Yes, even on the pencil stalks, you still want to trim off the very bottom of the stalk. The ends often can be woody and difficult to chew.
- What do I do with asparagus trimmings? I save mine for soups, stews and veggie stalks. Just pop them in a freezer bag and use in a future dish.
- Can I freeze fresh asparagus?: Yes but you need to blanch it first. Don’t forget you still need to trim the ends.
- How do I reheat cooked asparagus?: Avoid the microwave as that will make it soggy. Place it on a lightly sprayed baking pan and place it in a preheated 425F for 5-10 minutes or until warmed through.
Boursin Baked Asparagus Substitutions & Additions
With this recipe, the only thing I’d suggest subbing out would be different flavors of Boursin.
- Boursin: try one of the other flavors
- Cheese: If you don’t have or can’t find Boursin, use crumbled feta or goat cheese in a pinch though I would suggest before broiling you drizzle on a hint of olive oil over top of the cheese
- Toppings: when it’s done sprinkle on crispy bacon, toasted nuts, or crumbled chorizo
- Make it a meal: when it’s done, plate and then top with a dippy egg or slices of steak

- Preheat oven to 375F. Whisk together the olive oil, garlic, salt, pepper, and red pepper flakes; set aside.
- Place the asparagus in a single layer in a large-rimmed baking dish/pan Spoon over the oil and herb mixture. Toss the asparagus gently to coat evenly. Put the pan in the oven and bake for 15-25 minutes* or until fork tender. *Thinner stalks will take less time, while fatter ones will take longer.
- Remove the pan from the oven and set it to broil. Crumble the Boursin over top of the asparagus, place the pan back into the oven, and broil for a few minutes or until the cheese starts to melt barely and has some hints of char.
- Remove from the oven and serve immediately.
