How to Make Slow Cooker Banana Pepper Pot Roast

- Make the sauce.
- Slice the peppers and onions.
- Brown the beef.
- Add everything to the slow cooker and cook for 8 hours on low. Once done, shred the beef, reduce the liquid to a sauce, add the meat and veggies, and serve.

While you can substitute one for the other, they are different. They vary in taste, heat level, appearance, and texture.
- Banana Peppers: they are milder in heat. The riper a fresh banana pepper is, the sweeter it will be. The jarred rings are pickled and will also be a tad zesty. They have some heat but are low on the Scoville scale (0-500). Fresh ones are longer, smooth, slightly curved, and have a pointy end
- Pepperoncinis: Their heat level is a bit spicier than banana peppers. When pickled, they have a tangy, almost sour taste. They have some heat but are low on the Scoville scale (100-500). Fresh peppers are shorter, with a round end and wrinkly skin.

Ingredients
- 8 servings of Banana Pepper Shredded Roast Beef (~4–6 cups), heated
- 16 8″ flour tortillas, warmed
- lettuce leaves (1-2 butter lettuce leaves)
- 8–12 cherry tomatoes, chopped
- cilantro, chopped
- 1 cup banana pepper rings
- 2 cups shredded chihuahua cheese
Optional toppings:
- Lime crema
- 2 avocados, sliced
- Sliced radishes
Instructions
- Place a warm tortilla on a plate or in a taco holder. Add 1-2 lettuce leaves inside, followed by 1/4-1/3 cup of the meat.
- Top with shredded chihuahua cheese, banana pepper rings, chopped tomatoes, and cilantro.
